Ingredients for spring salad:

  • 1 radicchio
  • 1/2 head of lettuce
  • 1 cup young broccoli
  • 1 pickled beetroot
  • 1 tablespoon of olive oil
  • chives
  • mint leaves
  • sea salt
  • freshly ground black pepper

 Ingredients for salad dressing:

  • 1 potato
  • 1/4 peeled onion
  • 1 1/2 cloves of garlic
  • 5 tablespoons of olive oil
  • 1 tablespoon of balsamic vinegar
  • 1 teaspoon of mustard
  • fresh herbs
  • 1/2 tsp sea salt
  • freshly ground black pepper

Preparation of spring salad with chicken:

Put the peeled potatoes, cut into small pieces, onions and garlic in a pot of salted cold water. Put on fire and cook for about 20 minutes. Then drain the cooked ingredients. Pour out 150 ml of the water in which you cooked the potatoes, onions and garlic, as you will need it in the further preparation of the dish.
Place potatoes, onion, garlic, reserved water, oil, mustard, balsamic vinegar and fresh herbs in a food processor. Mix well until you get a liquid mixture. Salt and pepper to taste. So, the dressing is ready.
Clean the radicchio and lettuce leaves. Chop the chives. Wash the broccoli and tear it into pieces.
Pour the dressing over the salad leaves, vegetables and herbs. Sprinkle with herbs. Poached eggs also go well on top. Have a good run!
