Ingridients: wild salmon fillet, 100 g of fresh spinach, 2 tablespoons of lemon juice, 3 tablespoons of olive oil
Preparation: Wash the spinach and steam it with the whole leaves to preserve as many vitamins as possible. When the leaves "wither", we set them aside and fold them into a cup to get a kind of fold, which is then spread on a plate. Press well to drain excess water. Fry the salmon in olive oil for a few minutes on each side until golden. It should be pink inside. Serve on a plate and drizzle with a few drops of olive oil and lemon juice.
