2 tablespoons of butter
2 cloves of garlic
2 cups broccoli, florets and stems
¼ teaspoon salt
2 cups of vegetable broth
1 tablespoon of flour
¼ cup full-fat Greek yogurt
¼ cup warm water
½ cup grated cheese (cheddar is best)
How to make cream of broccoli soup with Greek yogurt:
In a medium-sized skillet over medium-high heat, melt 1 tablespoon of the butter. Add the crushed garlic and cook for 1 to 2 minutes, or until the garlic is fragrant. Stir in the broccoli and stir until well combined with the butter. Season with salt to taste. Reduce heat, cover pan, and cook until broccoli is bright green (5 to 7 minutes). Add the vegetable broth and cover.
Meanwhile, heat a tablespoon of butter in a small non-stick pan. Add the flour and stir until golden brown. Stir in the Greek yogurt and warm water. Stir until the sauce is smooth. Add the cheddar cheese and stir until the cheese melts. Turn off the heat.
