Place ¼ oil, egg, ground mustard and salt in a blender. Mix for 30 seconds or until the ingredients are combined and turn a nice yellow color. While mixing, lightly and slowly add the remaining oil. If you add the oil too quickly, it will not have the right consistency. Blend for about 90 seconds or until the mayonnaise is creamy. Then add the lemon juice and mix for another 5 seconds.
