Ingredients

  • 50 grams of coconut flour
  • 150 ml of coconut milk
  • 200 ml of milk
  • sugar (to taste)
  • 1 tablespoon chia seeds (optional)
  • 80 grams of dark chocolate

Directions

  1. In a medium bowl, combine the coconut flour, coconut milk, milk and sugar, adding chia seeds for added texture if desired. Mix well until the ingredients are combined.
  2. Pour the mixture into ice cream molds. You should get about six popsicles from this amount of mixture. Insert a wooden stick into each popsicle.
  3. Place the molds in the freezer to freeze the ice cream.
  4. When the ice cream is hard enough, take the molds out of the fridge. Pour melted dark chocolate over the top of the ice cream to add an extra layer of flavor.
