If you love mushrooms, then you know how quickly they can go bad. You can enjoy your "Forest catch" all year round if you only know how to freeze the mushrooms properly. You can keep mushrooms in the refrigerator for only a few days, but in the freezer for about half a year. As long as you keep them in the fridge, store them in a paper bag, not a plastic one. Do not store dishes with mushrooms for the next day, as harmful compounds are formed when heated, which can be dangerous to health.
How to freeze mushrooms?
Do not freeze fresh mushrooms, but blanch them beforehand. After blanching, you can freeze them on a tray and put them in plastic bags and use them within six months. When blanching, you can add a few drops of vinegar to the water so that it does not lose its color. You can also saute them in butter or onions and store them in plastic jars and freeze them.
Preparing mushrooms for freezing
Clean the mushrooms thoroughly and remove the bad parts. Cut them into quarters or slices. Fry them quickly in oil until they soften a little and release the water. When the water evaporates, let them cool. Arrange the mushrooms in a single layer on a baking sheet lined with baking paper and place in the freezer. Place the cooled mushrooms in freezer bags, squeeze as much air out of them as possible, close and mark the date when they were frozen.
