Ingredients

    Ingridients:
  • 1 1/4 cups rolled oats
  • 1 cup boiling water
  • Wet ingredients:
  • 1 egg
  • 3/4 cup coconut or almond milk
  • 1/4 cup coconut oil
  • 3/4 cup raw cane sugar
  • 1 teaspoon of vanilla extract
  • Dry ingredients:
  • 1 1/4 cups oat flour
  • 4 teaspoons baking powder
  • 1 teaspoon of salt
  • 3/4 cup chocolate chips

Directions

  1. Soak the oatmeal for 1 hour or overnight.
  2. Once the flakes are well soaked, mix them together with the egg, plant-based milk, coconut oil, sugar, and vanilla.
  3. In another bowl, mix the dry ingredients: oat flour, baking powder, and salt.
  4. Combine the wet and dry ingredients and gently fold in the chocolate chips at the end.
  5. Pour the batter into muffin tins that have been lined with parchment paper or greased with oil.
  6. Heat the oven to 200 °C.
  7. Bake for 25–30 minutes at 200°C until the muffins are golden brown and a toothpick inserted into the dough comes out clean.

Are lactation muffins just a dessert or a miracle cure?

While there's no guarantee that every lactation cookie will increase your milk supply, this trend still has a lot to offer moms.
