Recipe: grilled Sunday sandwich from Krvavac

Apart from Ana Roš, everyone who was part of the four-day Gourmet Cup Ljubljana is increasingly aware that in order to achieve great success, you have to walk on the edge. The event hosted many Slovenian and foreign top chefs, culinary critics, writers and experts, who watched, tasted and listened with interest to everything that Slovenia has to offer in the field of cuisine. Judging by their responses, Slovenia has great potential for development into a recognizable culinary destination.

There was no shortage of such delicious treats at the four-day event, but how do you prepare them yourself? Baked Sunday sandwich from Krvavac, by prescription Ane Šušteršič from Jezeršek hospitality, read below.

1. Ingredients for preparing stewed beef flank:

  • 1 piece of beef flank with bone (approx. 1 kg)
  • 70 ml of soy sauce
  • 50 ml of rice wine
  • 70 ml refill bottle
  • 1 large slice of ginger
  • 40 g dark miso paste
  • 1 small sprig of rosemary
  • 2 sprigs of thyme
  • 25 g of flower honey
  • 1 chili
  • half an onion
  • 2 cloves of garlic
  • 160 ml of water
  • salt
  • freshly ground pepper
  • pork mesh

Preparation of braised beef flank:
Place the cut piece of beef flank with the bone in a tall fireproof dish. It is best to take a tall container with a lid, suitable for the oven. Put all the other ingredients in a bowl, mix and add to the beef flank. Cover and stew in the oven at 130 degrees Celsius for about 3 hours, or until the meat comes away from the bone easily. Tear the cooled beef flank. We also remove the bone marrow from the bones, which we mix together with the gelatinous connective tissue that we have torn. Leave the rest of the meat shredded. Then mix everything together and season if necessary. You can leave it torn or form thinner loaves of any size from the prepared mass. Each loaf is individually wrapped in pork mesh.

2. Ingredients for preparing kale salad with red radish and mustard seeds:

  • 200 g of Brussels sprouts or a head of cabbage
  • 500 g of red radish, cut into noodles or thin rings
  • 1 tablespoon of mustard seeds or to taste
  • 8 ml of apple cider vinegar
  • 5 ml of olive oil
  • 10 g of sugar
  • 5 g of salt
  • a pinch of ground cumin
  • thin spring onion rings as desired

Preparation of kale salad:
Cut the Brussels sprouts into thin noodles. Put it in a bowl, add all the other ingredients and mix lightly.

3. Ingredients for preparing apple horseradish:

  • 1 topaz apple
  • lemon juice
  • 50 g of delicatessen horseradish
  • 50 g of mayonnaise
  • tarragon
  • salt
  • freshly ground pepper

Preparation of apple horseradish:
Grate the apple, refresh with lemon juice, add horseradish, mayonnaise, salt, pepper and chopped fresh or dry tarragon.

How to make a mirrored Sunday sandwich with Krvavcaa:

We need "Sunday" model bread - we can help with the recipe for brioche. Cut the bread into slices. Grease each slice well with butter and fry it on a hot pan or "grill" it until golden brown. Spread one of the two slices liberally with apple horseradish. The shredded meat of the stewed flank is quickly fried on a hot pan (or you can fry the meat loaves). If necessary, refresh it with the sauce in which the meat was stewed. Place the meat on top of the horseradish. We finish with the cabbage salad, on which we place another slice. The sandwich is served with a cup of hot pure beef broth. Have a good run!
