Ingredients

    Ingredients for pancakes:
  • 2 cups flour
  • 2 tablespoons of sugar
  • 1 teaspoon of baking powder
  • pinch of salt
  • 2 eggs
  • 2 cups of milk
  • 2 tablespoons melted butter, plus pancake batter
  • 1 teaspoon of vanilla sugar
  • Ingredients for the filling:
  • 250 g of cream cheese
  • 1/4 cup sugar
  • 1 teaspoon of vanilla extract
  • 1 cup fresh strawberries (washed, peeled and sliced)
  • 1/2 cup fresh blueberries

Directions

    Pancakes:
  1. In a large bowl, mix the flour, sugar, baking powder and a pinch of salt.
  2. In a separate bowl, beat the eggs, milk, melted butter and vanilla sugar until foamy.
  3. Slowly add the wet ingredients to the dry ingredients and mix until you have a smooth dough.
  4. Heat a pan over medium heat and add a little butter to melt.
  5. Scoop the batter with a ladle and bake the pancakes until all the batter is used up.
  6. Filling:
  7. Beat cream cheese, sugar and vanilla extract in a bowl until smooth.
  8. Add the chopped strawberries and blueberries to the filling and toss to distribute evenly.
  9. Assembling the cake:
  10. Line a round mold with a removable ring with pancakes so that they cover the bottom and extend over the ring.
  11. Spread part of the filling on the first layer of pancakes and spread it evenly.
  12. Repeat the process until you have used up all the filling, and finish the layer with pancakes.
  13. Fold the top of the pancakes inward to close the cake.
  14. Decorate the center of the cake with fresh fruit such as strawberries and blueberries.
  15. Place the cake in the refrigerator and let it cool well for about 2 hours.
  16. Then remove the removable ring and cut the cake into slices.
