- Ingredients for pancakes:
- 2 cups flour
- 2 tablespoons of sugar
- 1 teaspoon of baking powder
- pinch of salt
- 2 eggs
- 2 cups of milk
- 2 tablespoons melted butter, plus pancake batter
- 1 teaspoon of vanilla sugar Ingredients for the filling:
- 250 g of cream cheese
- 1/4 cup sugar
- 1 teaspoon of vanilla extract
- 1 cup fresh strawberries (washed, peeled and sliced)
- 1/2 cup fresh blueberries
Directions
- Pancakes:
- In a large bowl, mix the flour, sugar, baking powder and a pinch of salt.
- In a separate bowl, beat the eggs, milk, melted butter and vanilla sugar until foamy.
- Slowly add the wet ingredients to the dry ingredients and mix until you have a smooth dough.
- Heat a pan over medium heat and add a little butter to melt.
- Scoop the batter with a ladle and bake the pancakes until all the batter is used up. Filling:
- Beat cream cheese, sugar and vanilla extract in a bowl until smooth.
- Add the chopped strawberries and blueberries to the filling and toss to distribute evenly. Assembling the cake:
- Line a round mold with a removable ring with pancakes so that they cover the bottom and extend over the ring.
- Spread part of the filling on the first layer of pancakes and spread it evenly.
