Ingredients

  • 4 pieces of salmon fillet
  • 3 cloves of garlic
  • a little butter and vegetable oil (for frying)
  • 150 g of cherry tomatoes
  • 50 g of fresh spinach
  • 0.5 cups of sweet cream
  • 50 g of Parmesan cheese
  • fresh parsley to taste
  • fresh basil to taste
  • salt and black pepper to taste

Directions

  1. First, season the salmon fillets with salt and pepper. Heat a mixture of butter and vegetable oil in a pan, then add the salmon. Fry over medium heat until nicely browned, about 4-5 minutes on each side. When the salmon is cooked, remove it from the pan and keep it warm.
  2. Add a little more butter to the same pan. Once melted, add chopped garlic and fry until golden and fragrant. Then add the halved cherry tomatoes to the pan and fry until they soften and release their juices.
  3. When the tomatoes are ready, add the sweet cream and grated Parmesan cheese. Stir until the parmesan has melted and the sauce is smooth and creamy. Stir the fresh spinach into the sauce and cook until tender.
  4. Return the baked salmon fillets to the pan with the sauce. Add chopped parsley and basil, and season with salt and pepper if desired. Let it cook for a few more minutes so that the flavors intertwine and the dish becomes perfectly juicy.
  5. Serve with freshly baked bread or favorite side dishes such as rice, pasta or a fresh salad.
