Recipe: Let's liven up evening get-togethers with healthy and original snacks

With the upcoming holidays, we like to spoil ourselves a little in the evening and spend time with our loved ones. That's why I'm sharing with you some original, unusual and at the same time healthy snacks and recipes to spice up these pleasant evenings.

Kale, beetroot, carrot and roasted zucchini chips with vegan cheese and spices

Cut the kale into smaller leaves of the desired size, wash them and dry them well (easiest in a salad dryer). Then cut or grate the beetroot into very thin slices. In a large bowl, mix kale leaves and beetroot slices with olive oil, Himalayan salt and chili with sea salt. If desired, add other spices such as basil, rosemary and oregano.

Cut the zucchini into slices of the desired size and season them with rosemary, Himalayan salt and coarsely ground pepper.
Arrange all the vegetables on a baking sheet lined with parchment paper. Grate cheese on one part of the vegetables (I suggest vegan cheese or goat cheese). On another part of the vegetables, spread the peeled and grated carrots into long strips on top. Then roast the vegetables in an oven heated to 200 °C until crispy (preheat for 15 min).

Ingridients:

  • 1 cup oatmeal
  • 1 cup whole wheat semolina flour
  • 5-7 spoons of seeds - sunflower, sesame, flax (if desired, others as well)
  • half a cup of water
  • 3 tablespoons of olive oil
  • a teaspoon of salt and pepper to taste
  • 1-2 tablespoons of fresh or ground rosemary
  • 3/4 teaspoon baking powder with tartar

Preparation:
Heat the oven to 180 °C.
First, toast the oatmeal and seeds in the oven (on baking paper in a baking tray) until golden brown (a few minutes).
Meanwhile, immediately prepare the flour and other dry ingredients in a blender or in a large bowl, and add the toasted flakes and seeds to them.
Mix everything together.
Add water and oil to the prepared mass and knead the dough. Add the water slowly, not all at once, so that the mass is not too sticky.

Roll out the dough thinly and cut it into long sticks, which you can roll into spirals if desired. Bake them in the oven at 180 °C. 15-25 min until golden brown.

Cut fresh beetroot and turnip into thin slices, season them with Himalayan salt, pumpkin seeds and pumpkin oil.
