Recipe for carnival donuts with homemade apricot jam
Ingredients for carnival donuts:
- 1 kg of sharp flour
- 70 g of fresh yeast
- 120 g of foamy mixed butter
- 7 egg yolks
- 50 ml of warm milk
- 40 g of sugar
- 3 tablespoons of rum
- 1 bag of vanilla sugar
- ½ tablespoon of lemon juice
- ½ teaspoon of salt
- oil
- apricot marmalade
- icing sugar

Procedure for Mardi Gras Donuts:
For the best results, prepare the donuts in a warm room without drafts. It is also a good idea to warm up all cooking utensils and necessary ingredients to room temperature beforehand.
Pour the flour into a bowl and heat it in a preheated oven. Then make a hole in the warmed flour and crumble the yeast into it, pour a little warm milk and add a spoonful of sugar. Cover the bowl and let it rise in a warm place for about 15 minutes.
Place egg yolks, remaining sugar, vanilla sugar, salt, lemon juice and rum in a small bowl. Mix all the ingredients into a smooth mixture.
Add softened butter, beaten egg yolks and a little warm milk to the rising yeast and mix slowly. It is best to use an electric mixer with spiral whisks. Gradually add the remaining milk while mixing. We mix until we get a flexible dough. Shape the dough into a loaf, sprinkle with flour, cover with a warm cloth and leave to rise for at least 40 minutes. Form balls from the risen dough with your hands or roll out the dough on a floured surface and use a glass to cut out small circles. Place them on a floured board and turn them over after a few minutes. Add the oil and heat it to about 170 degrees. The oil will be heated enough when bubbles appear on the stove. While frying, make sure that the oil is not too hot. Carefully lift the donuts and place them in the oil. Cover the pan with a lid while baking. Let them cook until golden, then turn them over and wait for them to cook on the other side. This time the container is not covered with a lid. Place the fried donuts on paper towels to drain. Fill the still lukewarm ones with apricot jam, sprinkle with powdered sugar and serve.
