Ingredients

  • 1 sheet of puff pastry
  • 250 g of ricotta cheese
  • 1 pear, thinly sliced
  • 1 egg yolk
  • 1 tablespoon of cream
  • 4 tablespoons of butter
  • 4 spoons of honey
  • 8 thin slices of prosciutto
  • salt
  • black pepper, freshly ground
  • olive oil
  • a handful of chopped cashews
  • a sprig of fresh rosemary

Directions

  1. Heat the oven to 200 degrees and line a baking tray with baking paper.
  2. Roll out the puff pastry into a rectangle. Spread the ricotta evenly over the dough, leaving a two-finger-wide edge empty. Salt and pepper.
  3. Arrange the sliced pears on top of the ricotta. Drizzle with olive oil and season again. Bend the edges of the dough inward and connect the corners. Beat the egg yolk and cream in a small bowl. Coat the edges of the dough with the mixture. Bake the cake for 30 minutes.
  4. Meanwhile, melt the butter in a saucepan over medium heat. Add a sprig of rosemary. Reduce the heat and continue to cook until the butter is colored and the rosemary is crisp. Set aside and stir the honey into the mixture.
  5. Take the cake out of the oven and drizzle with 2 tablespoons of the honey mixture. Bake for another 10 minutes. Mix the walnuts into the remaining honey and butter mixture.
  6. Take the cake out of the oven and let it cool a little. Serve the prosciutto, sprinkle the cake with walnuts and drizzle with honey and butter.
  7. Cut into pieces and serve immediately.
