Thanks to fresh ingredients that are not thermally processed, cold soups are a source of health, as the food retains all its nutritional value. In this article, we reveal a recipe for a cold and refreshing soup made from green tomatoes and avocado.
Green gazpacho
Ingredients
- 1 kg of green tomatoes
- 2 avocados
- 2 cloves of garlic
- 1 dl of olive oil
- 1/2 dl of balsamic vinegar
- salt
Directions
- Peel the avocado and chop it together with the green tomato.
- Add all the ingredients to a blender, along with the olive oil, garlic and balsamic vinegar and blend until smooth.
- Chill in the fridge and drizzle with a little olive oil before serving.
