Recipe: green gazpacho (cold soup)

Cold soups are the perfect lunch for hot days. They are ready in no time and are a real energy bomb. Thanks to fresh ingredients that are not thermally processed, cold soups are a source of health, as the food retains all its nutritional value. In this article, we reveal a recipe for a cold and refreshing soup made from green tomatoes and avocado.

Green gazpacho

Ingredients

  • 1 kg of green tomatoes
  • 2 avocados
  • 2 cloves of garlic
  • 1 dl of olive oil
  • 1/2 dl of balsamic vinegar
  • salt

Directions

  1. Peel the avocado and chop it together with the green tomato.
  2. Add all the ingredients to a blender, along with the olive oil, garlic and balsamic vinegar and blend until smooth.
  3. Chill in the fridge and drizzle with a little olive oil before serving.
