Recipe for rjukmara (Serbian gibanica)

Do you know what a hustler is? Who says that Serbian food is only čevapcici and pleskavice?! Lovers of Serbian cuisine will also find a recipe for a jam, also known as a Serbian gibanica (also a cheese wrap). A simple, delicious meatless dish that will have everyone licking their fingers! Forget burek!

At the word gibanica we first think of the Prekmurje gibanica, but the preparation of this excellent dessert is demanding, so we prefer to give it to you recipe for Serbian gibanica, which we call it in the original crowded. It's not about dessert, but rather cheese roll, the preparation of which is as simple as flipping čevapčići on the grill! All you have to do is yes roll up the puff pastry like newspaper, dip it in the mass, and you get a beautiful pie that your guests will not be able to praise.

Recipe for rjujara (Serbian gibanica):

Ingredients for rjumara (Serbian gibanico):

  • 30 dag of cottage cheese
  • 4 sheets of puff pastry
  • 10 dag of feta cheese
  • 150 ml of milk
  • 2 eggs
  • 1 dcl of oil
  • bicarbonate of soda

Preparation of rjujara (Serbian gibanica):
With a fork, mix the cottage cheese, eggs, cheese, milk and half a teaspoon of baking soda, which you previously dissolved in a deciliter of water. Mix until you get a semi-liquid mass (with lumps of cheese and cottage cheese). Grease the baking pan and line it with a wavy layer of dough, which you pour over with oil. After the dough, sprinkle the mass and cover it with the next layer of dough. Crease this so that the waves are now perpendicular to the previous layer. Grease the dough again. Repeat the whole thing twice more (four layers of dough in total) so that each layer is perpendicular to the previous one. Then spread the rest of the mass over the top. It is even easier to line the baking sheet with puff pastry, and crumple the remaining puff pastry into a ball like newspaper, dip it in the mixture and "crumple" it into the baking sheet (see the video for an easier demonstration). Preheat the oven to 180 degrees Celsius and bake for about 30 minutes. Have a good run!
