Ketchup is a very popular food additive. When you try homemade ketchup, you will be convinced that it is worth all the time you spend preparing it, because the taste is incomparably fuller and tastier.
Most homemade ketchup recipes are made from canned tomatoes. For an excellent taste of ketchup, it is necessary to use fresh tomatoes. You can use different types of tomatoes - from cluster, oxheart, and you can also combine with cherry trees.
Ingredients for homemade ketchup:
- 4 cloves
- 2 bay leaves
- cinnamon stick
- ¼ teaspoon celery seed
- ¼ teaspoon chili
- ¼ teaspoon allspice
- 2 kg of tomatoes
- salt
- ½ cup apple cider vinegar
- 5 tablespoons of brown sugar
- 1 onion
- sweet chili
- clove of garlic
Preparation of homemade ketchup:
Prepare first a bag of spices. Take cheesecloth and place cloves, bay leaf, cinnamon stick, celery seeds, chili and allspice in it. Then tie the gauze with string to form a bag.
In a 4-liter pot, add tomatoes (you can also combine tomato varieties), salt, vinegar, sugar, onion, chili, garlic and the bag of spices you prepared earlier. Cook over medium heat until the tomatoes and chilies are soft and the onions are translucent. Remove the spice bag after cooking.
Mix the ketchup puree with stick mixer, and then strain it through a fine sieve to remove any remaining seeds. Use a fork to help with this. Add the strained contents back to the pot and simmer on low heat for another 30 minutes. Don't forget to stir, as the contents can quickly stick to the container. When the ketchup thickens to the desired texture, cool it and serve it in glass containers. You can keep it in the fridge for up to 3 weeks.
