Recipe: Italian crispy bruschetta

One of our favorite evening snacks is definitely bruschetta. It is a mixture of chopped tomatoes, basil, vinegar, garlic, olive oil and crusty rustic bread.

Ingredients

  • 1 sliced loaf of bread
  • 3 tablespoons of extra virgin olive oil
  • 8 diced tomatoes
  • a handful of fresh chopped basil
  • 30 g of freshly grated parmesan cheese
  • 2 cloves of finely chopped garlic
  • 1 tablespoon of good quality balsamic vinegar
  • salt, pepper

Directions

  1. Heat the oven to 200 degrees. Brush both sides of the bread slices lightly with 1 tablespoon of oil and place on a large baking sheet. Bake the bread until golden brown for 5 to 10 minutes.
  2. Meanwhile, mix the tomatoes, basil, parmesan and garlic in a bowl. Add balsamic vinegar, 2 teaspoons olive oil, salt and pepper.
  3. Spoon the tomato mixture onto the toasted slices of bread and serve immediately.
