One of our favorite evening snacks is definitely bruschetta. It is a mixture of chopped tomatoes, basil, vinegar, garlic, olive oil and crusty rustic bread.
Italian crispy bruschetta
Ingredients
- 1 sliced loaf of bread
- 3 tablespoons of extra virgin olive oil
- 8 diced tomatoes
- a handful of fresh chopped basil
- 30 g of freshly grated parmesan cheese
- 2 cloves of finely chopped garlic
- 1 tablespoon of good quality balsamic vinegar
- salt, pepper
Directions
- Heat the oven to 200 degrees. Brush both sides of the bread slices lightly with 1 tablespoon of oil and place on a large baking sheet. Bake the bread until golden brown for 5 to 10 minutes.
- Meanwhile, mix the tomatoes, basil, parmesan and garlic in a bowl. Add balsamic vinegar, 2 teaspoons olive oil, salt and pepper.
- Spoon the tomato mixture onto the toasted slices of bread and serve immediately.
