Blueberry pie with curd is a juicy and full of flavor dessert that can also be prepared from frozen blueberries. You don't need a lot of cooking knowledge to prepare a top-quality blueberry pie, as its preparation is extremely easy and does not take much time.
Recipe for juicy blueberry pie with cottage cheese
Ingredients for shortcrust pastry:
- 150 g of butter
- 300 g of white flour
- 50 g of powdered vanilla sugar
- pinch of salt
- 2 eggs
- ½ packet of baking powder
Ingredients for the filling:
- 500 g of low-fat cottage cheese
- 1 vanilla sugar
- ½ tsp grated organic lemon peel
- 100 g of powdered vanilla sugar
- 50 g of sugar
- 400 g of blueberries
- 180 g of sour cream
- 2 tablespoons of wheat semolina
- powdered sugar for sprinkling
Process:
Mix flour, salt and butter in a large bowl. Add powdered sugar and egg yolk to the mixture and knead everything into a dough, which is then placed in the refrigerator for about half an hour. Roll out the chilled dough about 1 cm thick and cover the well-greased bottom and edges of the round pie pan with it. Cover the dough with baking paper and place in an oven heated to 180 degrees for 5 minutes. Meanwhile, mix the cottage cheese, vanilla sugar and lemon peel in a bowl, and in another bowl the snow of two egg whites, 2 tablespoons of semolina, powdered sugar, sugar and a pot of sour cream. Gently mix the resulting mass into the vanilla curd and spread the resulting mass on the half-baked dough. Sprinkle blueberries over the cheese filling and bake in the heated oven for about half an hour. Sprinkle the cooled blueberry pie with powdered sugar and serve.
