Lamingtons is a dessert that charms just about everyone. The special delicacy combines tenderness, juiciness and the divine taste of coconut. If you have never made them yourself, this recipe will surely convince you.

Lamingtons are traditionally made from a vanilla sponge cake covered in chocolate sauce and then rolled in desiccated coconut. They are often found in local bakeries and supermarkets in Australia, although coffee shops are also increasingly serving these little cakes as an elegant yet nostalgic snack.

The preparation is easy, although it requires some patience, but every moment of effort is rewarded with a wonderful taste that you will hardly forget. The biscuit that is the base of the lamingtons is soft and juicy, which goes perfectly with the chocolate sauce and crunchy coconut. Together they form a perfect harmony of flavors.

We're ready to take you through the process of making these softest lamingtons you'll ever try. Follow the recipe below and get ready for a delicious experience.

Ingredients

    Ingredients for sponge cake:
  • 4 eggs
  • 1 vanilla sugar
  • 200 g of sugar
  • 200 ml of milk
  • 200 g of flour
  • 1 baking powder
  • Ingredients for chocolate sauce:
  • 350 ml of milk
  • 100 g of chocolate
  • 3 spoons of cocoa
  • 3 spoons of sugar
  • 150 g of margarine
  • Sprinkle ingredients:
  • 250-300 g of coconut

Directions

  1. Separate the whites from the yolks. Place the egg whites in a large bowl and beat them until stiff peaks form. Then set them aside.
  2. In another bowl, beat the egg yolks together with the remaining sugar and vanilla sugar until foamy.
  3. Add the flour and baking powder and then gradually pour in the milk. Mix everything well with a mixer to get a uniform mass.
  4. Then gently fold the stiff egg whites into the mixture. Use a spatula and mix from the bottom up to keep the sponge airy.
  5. Pour the mixture into an oiled pan and spread it evenly.
  6. Bake the biscuit in a preheated oven at 180 degrees Celsius for about 20 to 25 minutes. Check with a toothpick – when you pull the toothpick out of the biscuit and it comes out clean, the biscuit is done. Then cool it down.
  7. When the biscuit has cooled, cut it into cubes of the desired size.
  8. Chocolate omaa: put the broken chocolate in a pan, together with milk, cocoa, sugar and margarine. Heat while stirring until the chocolate is completely melted and the sauce is smooth.
  9. When the chocolate sauce has cooled slightly, roll the biscuit cubes in the sauce so that they are soaked on all sides.
  10. Finally, roll them in couscous.
  11. Place the lamingtons in the fridge to set the sauce and make the lamingtons even juicier.

Serve and enjoy the softest lamingtons that will melt in your mouth!
