Onion soup is one of the simplest and at the same time the most filling soups. Its preparation is quick and simple, and the taste is absolutely fantastic.

Ingredients
- 6 tomatoes
- 4 cloves of garlic
- a glass of red wine
- 4 onions
- 1 tablespoon of oregano
- 1 l of soup base
- tablespoons of olive oil
- 2 slices of bread
- 200 g of grated cheese of your choice
Directions
- Cut the tomato with a knife, chop the onion into large cubes, chop the garlic.
- Fry the onion in a little olive oil until caramelized, then add the garlic and sliced tomatoes and cook over moderate heat for about 3 minutes. Then add the red wine and let the alcohol evaporate.
- Add the soup base and cook over low heat until the content is reduced by half and the soup base becomes thicker. Add salt, pepper and oregano.
- Prepare the breads to serve with the soup. Add grated cheese to the slices and bake for 4 minutes, then drizzle with olive oil.
