Orange cookies

Ingredients

  • 1 1/3 cups oatmeal (ground oatmeal)
  • 18 pitted dates
  • 1 orange
  • melted chocolate for topping
  • orange peel

Directions

  1. Mix the sliced dates, oatmeal and orange juice in a blender. Mix until you get a uniform mass.
  2. Transfer the mixture to baking paper and press it down with your hands. Cover it with another paper.
  3. Use a rolling pin to roll out the mixture to an even thickness. You can use a cookie cutter or a glass to cut out the cookies.
  4. Transfer the cookies to a baking sheet lined with parchment paper. If you have problems with transfer, you can use a knife. Alternatively, you can form 15-16 balls and just stamp them and place them on the paper.
  5. Bake the cookies in an oven preheated to 170 degrees Celsius for about 15 minutes, or until they turn golden brown.
  6. Meanwhile, melt the chocolate for the topping and add grated orange peel if desired.
  7. When the cookies are baked and cooled, cover them with melted chocolate and sprinkle grated orange peel on top.
