Flourless orange cake
Ingredients
- 2 medium oranges
- 6 eggs
- 360 g ground almonds
- 250 g of coconut sugar
Directions
- Wash the oranges, put them in a pot and cover them with enough cold water to completely cover them, then cook them on medium heat for 40 minutes.
- Check from time to time whether the oranges are always under water. If they are not, add a little water.
- After 40 minutes, drain the oranges and let them cool.
- Then cut them, remove the legs and put them in a blender. Blend until the oranges have the texture of marmalade.
- Beat the eggs and sugar in a bowl until you get a thick pale yellow mixture.
- Add the orange "marmalade" and almonds and mix everything well.
- Pour the resulting mixture into a greased cake pan and bake for about 50 minutes at 180°C.
