It is excellent as a side dish, as a filling for vegetables, and you can also prepare an excellent salad from it when cooled.
Ingridients:
• 250g of couscous
• 1 onion
• 2 cucumbers
• 4 tomatoes
• olive oil
• fresh lemon juice
• parsley
• mint
• salt
• pepper
Preparation:
Prepare the couscous according to the instructions and pour a little olive oil into the cooked couscous. Mix and cool in the refrigerator. Peel the onion and cucumber and cut into thin rings. Wash the tomatoes and cut them into small cubes. Mix the prepared vegetables into the couscous, cover with lemon juice and olive oil and sprinkle with finely chopped parsley and mint leaves. Salt and pepper. Mix lightly and place the resulting mixture in the refrigerator. After an hour of cooling, serve and enjoy.
