Vegetable patties made of spinach and broccoli
Ingredients
- 250 g of fresh or frozen spinach
- 250 g of broccoli
- 250 g of fresh or frozen spinach
- 400 g of potatoes
- 1 medium onion
- 3 cloves of garlic
- salt and pepper to taste
- 1 bunch of parsley
- 200 g of breadcrumbs
- 50 g of sesame seeds
- 2-3 tablespoons of oil
Directions
- Wash the potatoes well and boil them in their skins. Cooking in the shell preserves more starch and flavor. When the water boils, add a little salt to bring out the flavor of the potatoes.
- Peel and finely chop the onion. Fry it in a few drops of oil until it becomes glassy. Add the sliced garlic and sauté for a few more minutes to blend the flavors.
- Wash the spinach thoroughly and dip it in boiling salted water for a few seconds. Then quickly drain it and finely chop it. Add the spinach to the sautéed onion and garlic and cook for another minute. Then remove from heat.
- Cook the broccoli in the same water as the spinach for about 4-5 minutes. Once cooked, drain and add to the potatoes.
- Peel the potatoes and mash them together with the broccoli into a paste. Add spinach with onion and garlic and season everything well with salt and pepper.
- Heat the oven to 200 °C. Take part of the mixture with a spoon and form balls. Roll the balls in a mixture of breadcrumbs and sesame seeds, place them on an oiled baking sheet and flatten them slightly. Spray with oil and bake for 20-30 minutes until golden brown.
Serve the spinach and broccoli vegetable patties warm or cold, with a green salad or potatoes.
