The matte and shiny sides of aluminum foil have their origins in the production process. To make the foil, two layers pass through the roller at the same time, with one side coming into contact with the highly polished steel roller and becoming shiny, while the other side remains matte. The question arises whether this difference in the structure of the film affects its use.

Depending on the use of aluminum foil when baking and storing food, it doesn't matter which way you turn the foil. Both sides are equally effective in maintaining freshness and providing even heat during baking.

Nevertheless, some manufacturers of non-stick aluminum foil recommend placing the food on the matte side and wrapping it with it. They say the matte side does a better job of preventing food from sticking to the foil. This is especially important when baking delicate dishes such as cookies or pastries.
