  • 220 g plain flour
  • 125 g cold butter
  • 100 g of powdered sugar
  • 1 egg

Preparation

Sift the flour and powdered sugar onto the work surface and make a well in the middle.

Cut the butter into small pieces, put it in a well, add the egg and knead a smooth dough with vanilla sugar, a pinch of salt and a little grated lemon peel.

Shape the dough into a ball, wrap it in cling film and leave it to cool in the fridge for about half an hour.

Then roll out the dough to a thickness of 2 mm and cut out circles. In the middle of the half of the circles, additionally cut a smaller circle, two or at most three.

Heat the oven to 180 degrees Celsius. Line the baking tray with baking paper and place the cookies on it.

Bake in the preheated oven for 8-12 minutes or until the cookies are nicely golden. Take them out of the oven and cool them down briefly.

Spread the lukewarm cookies without rounds with slightly warmed jam, place the remaining cookies on them and finally sprinkle everything with powdered sugar.
