Recipe: homemade creamy strawberry ice cream

Strawberry ice cream is one of those desserts that rarely anyone can resist. Jamie Oliver has presented his version of this popular dessert that does not require any special equipment to prepare.

Strawberry ice cream is made with a secret ingredient that ensures that the ice cream will be creamy even after freezing in a regular freezer.

Ingredients

  • 600 g of strawberries (plus extra for decoration)
  • 100 g of powdered sugar
  • 600 g of neutral cream
  • 1 teaspoon of vanilla extract
  • 400 g of condensed milk
  • 50 g of crushed pecans

Directions

  1. First clean the strawberries and cut them in half. Heat them with powdered sugar and two tablespoons of water over moderate heat. Cook the mixture for 10-15 minutes until you get a syrupy mass. Strain the syrup through a strainer to remove solids and obtain a smooth texture.
  2. Preparation of the cream: Whip the neutral cream in a large bowl until firm peaks are reached. Gently stir the condensed milk and vanilla extract into the whipped cream.
  3. Adding a secret ingredient: Jamie Oliver's secret ingredient that adds a special creaminess to ice cream is condensed milk. Thanks to it, the ice cream maintains a smooth and creamy texture, even after freezing for several hours. Crushed pecans are added to the cream mixture for extra texture and flavor. Pour the prepared cream mixture into a container suitable for freezing.
  4. Pour the cooled strawberry syrup over the cream mixture. Using a kitchen spoon or a spoon, mix the syrup lightly into the cream so that uneven strokes remain visible. This is how we achieve the rustic look that is characteristic of Jamie's dishes.
  5. Place the ice cream in the freezer for three hours or until it is completely frozen. Half an hour before serving, move the ice cream from the freezer to the refrigerator so that it softens a bit and can be served easily.
  6. Ice cream is served with additional fresh strawberries and a sprinkling of crushed ones pecans.
