A refreshing drink is perfect on hot summer days, and for everyone who wants something more than lemonade or iced coffee, we have something different for you, something exotic, summery and refreshing. Here is the recipe for mango iced tea with coconut ice cubes.
Ingredients for iced tea
- 400ml of light coconut milk (can also be classic)
- a small handful of small fresh mint leaves
- 500ml green tea (pre-brewed or purchased)
- 2 tablespoons of sugar
- 2 large mangoes, peeled, pitted and diced
- 1/2 tsp ground cardamom
- ¼ squeezed lime
- fresh mint leaves for garnish
Ingredients for coconut cubes
- 500ml of coconut milk
- 2 tablespoons of ground coconut
Preparation
Drain the coconut milk from the can into a small bowl and whisk and add the ground coconut. Pour into ice cube trays and freeze.
Let's brew green tea and mix sugar into it while it's still warm. Set aside to cool, it can also be placed in the refrigerator. Mix the diced mango, lime and cardamom with a hand blender until smooth and cool in the refrigerator. When cooled, mix everything together with coconut milk and sweeten if necessary.
Pour the mango tea mixture into the glasses, add coconut ice cubes and garnish with mint leaves.
If you want, you can also prepare an alcoholic version. Mix 1 dcl of vodka or malibu rum into the tea, stir and serve.
