Original Sicilian pizza

Ingredients

  • 6 cups of flour
  • 1 tablespoon of yeast
  • 1/2 cup butter
  • 2 cups of warm water
  • 1 teaspoon of salt
  • Ingredients for the filling:
  • 200 g of peas
  • 1 can of anchovies
  • 1/4 cup olive oil
  • 6 pieces of onion
  • 1 teaspoon of salt
  • 1/2 teaspoon dried oregano
  • Ingredients for tomato sauce:
  • 1 can of Pelatas (in pieces)
  • 1 cup of water
  • 2 teaspoons of tomato paste
  • 1 tablespoon of sugar
  • fresh basil

Directions

  1. Start by mixing flour, yeast, room temperature butter, salt and warm water. Use a mixer with the appropriate attachments to knead the dough. When you get a homogeneous lump of dough, knead it by hand for another 2 minutes. Then oil the dough and cover to let it rise. When the dough has doubled in size, divide it into 2 parts and roll out on well-oiled rectangular baking sheets. Cover with a cloth and leave to rise.
  2. Meanwhile, heat a quarter cup of olive oil in a pan and fry the coarsely chopped onion. Add salt and sprinkle with oregano. Fry until the onions are soft and golden brown. Transfer most of the onion to a separate bowl, leaving only a few tablespoons in the pan. You will use this for the tomato sauce.
  3. Combine the onion and water in a pan and mix well. After 2-3 minutes of cooking, add sugar, salt and chopped basil. Cook until the sauce boils, then a few more minutes to soften the tomatoes. Purée the sauce, reduce the temperature and cook for an additional 15 minutes. Add the tomato paste and mix well and cook for another 10 minutes.
  4. Pierce the first dough with your fingers, then spread half of the fried onions and anchovy fillets over it. Poke holes in the other dough with your fingers, then spread a layer of tomato sauce and the remaining fried onions on top. Sprinkle with the peas that you have previously thawed. Pour olive oil over both pizzas, and you can add salt to the one with fried onions.
  5. Bake the pizzas in a preheated oven at 205°C for about 20 minutes. When they are cooked, cut them into pieces and serve. Enjoy the flavors of Sicily!
