Recipe: Asparagus cream soup

Let's spoil ourselves with a classic spring vegetable soup, which is even sweeter with the addition of sweet cream and fragrant chives. This time, for a change, we will reach for white asparagus and prepare a fragrant cream soup from them.

Recipe for cream of asparagus soup:

Ingridients:

  • 400 g of white asparagus
  • 20 g of butter
  • 1 onion
  • 50 ml of white wine
  • 800 ml of vegetable broth
  • 100 ml of sweet cream
  • 50 ml of milk
  • salt
  • pepper
  • nutmeg
  • a handful of fresh chives

Preparation instructions:

Remove the woody parts from the cleaned asparagus and cut them into rings. Peel and finely chop the onion. Melt the butter in a pan and fry the onion, rings and asparagus heads on it. Remove the asparagus heads and cover with white wine and soup stock. Cook for about ten minutes, then add sweet cream and milk. Cook for another ten minutes. Season the soup with pepper, salt and nutmeg and grind with a hand blender. Serve with roasted asparagus heads and chopped fresh chives.
