Recipe: Divine Meringue Plum Pie

Plum pie always goes down well. Especially in the fall, when store shelves and home orchards sag under the weight of plums. The plum is actually a superfruit that contains a lot of vitamin C, which helps with the resistance of our body, and dietary fiber for the well-being of digestion. They also contain a lot of potassium, which is important in regulating blood pressure. Research has shown that regular consumption of plums has a positive effect on the work of the heart and the entire circulatory system.

They are best eaten raw, but they can also be used to prepare various sweet and savory dishes. They are most often used in desserts.

Meringue plum pie does not require many ingredients. A fine biscuit with the scent of vanilla, delicious plums and a wonderful meringue for sweetness and crunch.

Ingredients

  • 200 g of butter
  • 200 g of sugar
  • 4 large eggs
  • 1 tablespoon of sour cream
  • 1 teaspoon of vanilla extract
  • 350 grams of flour
  • 2 teaspoons of baking powder
  • 1 kg of plums
  • 200 g of powdered sugar

Directions

  1. Take the eggs and butter out of the refrigerator and let them come to room temperature. Heat the oven to 190°C. Grease the bottom and sides of a baking dish (35 cm x 25 cm) with butter and flour.
  2. Mix flour and baking powder.
  3. Separate the yolks and whites. Beat the butter and sugar on medium speed for about 3 minutes until light and fluffy. Add the egg yolks one at a time and mix until combined. Add the sour cream and vanilla extract, mix, then slowly add the flour and baking powder mixture while mixing.
  4. Gather the dough into a ball and place it in the baking pan. Spread it evenly on the baking sheet with your hands or a spatula.
  5. Clean and cut the plums into slices, then spread them over the dough and sprinkle each one with about half a teaspoon of powdered sugar. Bake for 40-50 minutes until almost done.
  6. Meanwhile, whip the egg whites into soft peaks. Gradually add powdered sugar and mix until the mixture becomes compact (with stiff peaks).
  7. Remove the pie from the oven and apply snow on it and carefully spread it over the entire surface with a spatula. Place the cake back in the oven and bake for a further 20-25 minutes until the egg white is lightly browned.
  8. Take the pie out of the oven and let it cool in the pan on a wire rack.
