Recipe: delicious Mardi Gras muffins with jam

This year, why not try a version of Mardi Gras donuts, with delicious Mardi Gras muffins? The preparation is certainly easier, and of course the taste is phenomenal.

Carnival muffins with jam they are a phenomenal version of carnival donuts, and you can prepare them in less than an hour (with baking).

Ingredients for carnival muffins with jam:

  • 2 eggs
  • 70 g of sugar
  • 125 ml (sunflower) oil
  • juice of half a lemon
  • 5 g of vanilla sugar or half a teaspoon of vanilla extract
  • 2 tablespoons of rum
  • 1 small pot of sour cream (180 g)
  • 220 g flour (optional)
  • 1/4 tsp baking powder
  • 1/4 teaspoon baking soda
  • apricot marmalade
  • powdered sugar (for sprinkling)

Preparation of carnival muffins with jam:

Let's prepare the muffin pan. Heat the oven to 200 °C. Mix flour, baking powder and baking soda in a bowl. In another bowl, beat the eggs at the highest speed. Gradually add sugar and continue mixing for at least 3 minutes, so that the mass rises. Add oil, sour cream, lemon juice, rum, vanilla to the mixture and mix (at a lower speed). Add the flour mixture to the mass and mix briefly. Pour the mass into the molds, first just enough so that the mass covers the bottom. Then put one teaspoon of jam into each cavity (for those with a sweet tooth, you can also put one and a half). Then pour the remaining mass into the wells. Fill the recesses to 3/4, not to the top. Carnival muffins should be baked for 20 to 23 minutes at 200 °C. We wait for them to cool down a bit. Sprinkle them with powdered sugar. We can try it warm. Have a good run!
