Recipe: Germknödel are plum dumplings filled with plum jam and vanilla sauce (Germknödel)

Dumplings called Germknödel are known to many from Christmas markets and ski resorts in neighboring Austria. It is a specialty that comes from Czech and Viennese cuisine. A real dumpling or Germknödel is made from yeast dough, filled with spiced plum jam and served with melted butter and a mixture of poppy seeds and sugar. You can also serve it with vanilla sauce. How to prepare such a specialty at home, we reveal to you in the article.

Ingredients

    Ingredients for making dumplings:
  • 280 g plain flour for sourdough
  • half a cube of fresh yeast
  • 60 g of sugar
  • 150 ml of milk
  • 60 g butter at room temperature
  • pinch of salt
  • grated lemon peel
  • 1 vanilla sugar
  • 1 egg
  • plum Marmelade
  • Ingredients for vanilla cream:

  • 1 egg
  • 1 tablespoon table starch (thickness)
  • 150 ml of milk
  • 50 g of sugar
  • vanilla aroma
  • poppy seeds for sprinkling

Directions

    Preparation of dumplings:
  1. Add a pinch of salt to lukewarm milk and crumble the yeast. Let stand for a few minutes to allow the ingredients to swell.
  2. 2 Put the flour, a pinch of salt and vanilla sugar in a bowl. Over time, add the rest of the ingredients.
  3. When the yeast is ready, add it to the flour and other ingredients and mix well.
  4. Add melted butter to the mixture and knead to get a soft and shiny dough.
  5. Cover the dough with a cloth and let it stand in a warm place for up to 30 minutes.
  6. When the dough has doubled in size, flour the surface and form small circles or squares from the dough and roll them out. Fill each shaped part with one spoonful of plum jam.
  7. Close each dumpling tightly and shape them into beautiful balls.
  8. Pour water into a large pot, add a little salt and oil. Boil the water and add the dumplings and cook them for 10 minutes.
  9. Dumplings must be turned during cooking. Use a wooden stick to check whether they are cooked. When you pierce the dumplings and there are still traces of dough on them, it means that they are not cooked yet.
  10. Place the sufficiently cooked dumplings on a plate, pour vanilla cream over them and sprinkle with poppy seeds.
  11. Preparation of vanilla cream:
  12. Put the milk in the cooking pot.
  13. Take a few spoonfuls of milk from the container and mix it with egg and sugar.
  14. Add the food starch (thickener) and vanilla and mix well.
  15. Boil the rest of the milk.
  16. Then add the prepared mixture with vanilla to the hot milk and cook over low heat until it thickens.
