Recipe: gazpacho cold soup

Cold soups are the perfect lunch for hot days. They are ready in no time and are a real energy bomb. Gazpacho, a well-known Spanish soup, is served cold. It is interesting mainly because it is made from fresh tomatoes, fresh cucumbers and stale bread.

Ingredients

  • 1 kg of tomatoes
  • 1 red pepper
  • 1 cucumber
  • 0.1 l of olive oil
  • 3 cloves of garlic
  • a little apple cider vinegar
  • half a squeezed lemon
  • fresh basil
  • fresh dill
  • salt and pepper

Directions

  1. Cut the tomato, cucumber, pepper, onion and garlic into pieces and drizzle with olive oil. Remove the seeds and put everything in a blender and mix until you get a homogeneous mixture.
  2. Add a little apple cider vinegar, the juice of half a squeezed lemon, tabasco if desired, fresh herbs and spices and mix everything well again.
  3. Leave some coarsely chopped herbs for serving. Chill in the fridge for at least half an hour before serving.
