Cold soups are the perfect lunch for hot days. They are ready in no time and are a real energy bomb. Gazpacho, a well-known Spanish soup, is served cold. It is interesting mainly because it is made from fresh tomatoes, fresh cucumbers and stale bread.
Gazpacho cold soup
Ingredients
- 1 kg of tomatoes
- 1 red pepper
- 1 cucumber
- 0.1 l of olive oil
- 3 cloves of garlic
- a little apple cider vinegar
- half a squeezed lemon
- fresh basil
- fresh dill
- salt and pepper
Directions
- Cut the tomato, cucumber, pepper, onion and garlic into pieces and drizzle with olive oil. Remove the seeds and put everything in a blender and mix until you get a homogeneous mixture.
- Add a little apple cider vinegar, the juice of half a squeezed lemon, tabasco if desired, fresh herbs and spices and mix everything well again.
- Leave some coarsely chopped herbs for serving. Chill in the fridge for at least half an hour before serving.
