No wonder when it's a combination biscuit and orange filling covered with chocolate, absolutely divine. But for a change, why not serve jaffa cookies to your guests, which will not come out of the packaging, but you will sign them?

Filling for homemade jaffa cookies:

  • half a teaspoon of orange gelatin
  • 2 teaspoons of orange marmalade
  • 120 ml of water

Topping for homemade jaffa cookies:

  • 200 g of dark chocolate
  • 4 tablespoons of butter

Dough for homemade jaffa cookies:

  • 2 eggs
  • 50 g of flour
  • 50 g of brown sugar

The process of making homemade jaffa cookies:
Set the oven to 180 degrees Celsius. Grease the muffin mold with butter and prepare a water bath. Beat the eggs in a bowl and add sugar. We beat until the eggs "become pale" and become fluffy. Shake in the flour and continue mixing until a thick creamy mass is obtained. This is then poured into muffin tins (fill each well with approx. half a centimeter of the mixture). Place in the oven for 10 minutes and let cool. Meanwhile, mix the jam, gelatin and boiling water in a bowl with a whisk and stir until a smooth mixture is formed. Pour into a shallow pan to form a centimeter layer and place in the refrigerator until it hardens. Cut out small circles from the mass and place them on the dough in molds. Let's repeat the exercise from the first part, when we put the bowl for the water bath on the cooker and place the bowl on it, in which we melt the chopped/grated chocolate and butter over moderate heat. Mix until the result is a liquid creamy mixture. As soon as we get the desired consistency, pour over the jelly and dough. Let the cookies cool, then remove them from the mold. And that's that! Have a good run!
