Today I chose chives and parsley, their bright flavors perfectly complement the creamy richness of the butter. The herbs are finely chopped and mixed into the butter, their vibrant green against the soft yellow color are a feast for the eyes. A pinch of sea salt intensifies the flavors and brings them together in perfect harmony.

Ingredients

  • sweet whipping cream
  • dried herbs of your choice or edible flowers
  • coarse salt
  • cold water

Directions

  1. Pour the cream into a bowl and stir for at least 15 minutes. Beat until buttermilk forms and the butter begins to separate.
  2. Then strain the butter through a clean cloth.
  3. Return the lump of butter to the mixing bowl and pour 250 ml of ice water over it, and mix well again.
  4. Take the butter out of the bowl and squeeze it to remove the water.
  5. Then add salt, herbs or edible flowers to the butter.
  6. Form it into the desired shape and store it in the refrigerator.
