When preparing pasta, there are many options for sauce - carbonara, bolognese, but one of the most popular types is pesto. Few people can resist this sauce.
Pesto is usually made from pine nuts and is used not only for pasta, but also in sandwiches and even as a dip for crackers or tortilla chips. Like any other sauce, it can be prepared at home and modified to make it more nutritious and healthy.
For this purpose, avocados, pumpkin seeds and other vegetables and spices of choice can be added to the sauce, and walnuts increase the amount of protein and improve cognitive functions.
The beauty of this recipe is that you can change almost all the ingredients to your liking, and at the end you can add meat as an additional source of protein.
Pasta with pesto sauce
Ingredients
- 1 ripe avocado, peeled and cleaned
- 130 g of arugula or spinach
- 40 g of raw walnuts or cashews
- 30 g of pine nuts or pumpkin seeds
- 3 cloves of garlic
- juice of one lemon
- 2 tablespoons of extra virgin olive oil
- 6 tablespoons water (or more as needed)
- 1 package of pasta as desired
Directions
- Cook the pasta according to the instructions on the package.
- While the pasta is cooking, add all the pesto ingredients to a blender and blend until smooth and lump-free.
- When the pasta is cooked, strain it and add pesto to taste and, if desired, meat.
