Pancakes are one of the most popular dishes. Most often, we enjoy them with sweet spreads or fillings, but those with salty fillings are also excellent. We offer you a recipe for preparing savory pancakes, which is an excellent alternative for those who are not fans of sweets.
Savory pancakes with zucchini and brioche
Ingredients
- 1/2 cup milk of your choice - cow's milk, oat milk, rice milk...
- 3 eggs
- 150 g of buckwheat or ordinary wheat flour
- 60 g of spinach
- fresh tarragon
- salt
- a pinch of sugar
- pepper
- 160 g brie
- 80 g of goat cheese
- 8 semi-dried tomatoes in oil
- 1 tablespoon of fresh chopped chives
- 1 flask
- extra virgin olive oil or butter
Directions
- Take the cheeses out of the refrigerator and leave them at room temperature.
- Cut the zucchini into strips and leave to rest in ice water until crisp.
- Cut the tomatoes into cubes.
- Combine the milk, flour, eggs, spinach, tarragon, chives, salt, pepper and sugar in a blender until a thick pancake batter forms.
- Heat a frying pan greased with oil or butter over medium heat. Use a ladle to spread the batter on the baking sheet and let it harden, then flip and bake.
- When the pancakes are baked, fill them with zucchini, cheese, spinach and tomatoes. Fry a little more and serve.
