- 6 larger persimmons
- 200 g of sugar
- 2 tablespoons of water
- 1 tablespoon cornstarch
- juice of one lemon
Preparation
Make sure you use ripe persimmons. Clean them, peel them and remove any seeds. Purée the persimmons with the help of a multi-tasker. Place the puree in a medium saucepan, add the sugar and let it boil for 15 minutes over medium-high heat. Stir occasionally. In a small bowl, mix the water and cornstarch together until the cornstarch is dissolved. Add the mixture to the puree, add lemon juice and leave on low to medium heat for another 15 minutes to thicken slightly. Stir occasionally.
If you want the jam to be even thicker, add the cornstarch and water mixture again. Do not add cornstarch directly to the jam or you will get lumps.
Allow the jam to cool to room temperature, pour into cleaned jars, close them and store the jam in the refrigerator.
