Ingredients
- Ingredients for the filling:
- 1 stemless eggplant, diced
- 2-3 tablespoons of olive oil
- 1 red onion, thinly sliced
- 1/2 cup pitted kalamata olives, sliced
- half a cup of diced tomatoes
- 1 teaspoon crushed red pepper
- 2 cloves of garlic, cut into pieces
- 1 pinch of salt
- ground black pepper as desired Ingredients for the dough:
- 1 cup all-purpose flour
- quarter cup of unsweetened plant-based milk (oat, rice, soy, etc.)
- 1 tablespoon of olive oil
- 1 teaspoon of baking powder
- 1 pinch of salt Additional ingredients:
- 1 handful of arugula or other vegetables
- vegan cheese as desired (e.g. vegan parmesan)
Directions
- First start preparing the filling. Fry the eggplants in olive oil on medium heat for a few minutes or until they start to soften. Add the onion and cook for about 8 minutes.
- Stir in the olives, tomatoes, garlic, salt and pepper. Then reduce the heat and let the filling bubble slightly while you prepare the dough.
- In a large bowl, mix the flour, vegetable milk, olive oil, baking powder and salt. Mix until you get the texture of the dough, then shape it into a ball and place it on a floured surface.
- Roll out the dough thinly and place it in the pan. Then place it on medium heat and cook on each side for 3 minutes or until it turns a light golden color.
- Spread the filling evenly over the dough and add arugula and vegan cheese on top. Bon Appetit!
