The best elderberry recipes: refreshing drinks and dishes

Summer is just around the corner, so it's no wonder we're craving refreshing drinks and foods like those made with the versatile elderberry. This time we looked up which ones they are for you the best recipes with elderberry, which you can prepare 1,2,3 and do not require special knowledge.

Quick and easy elderberry juice

Ingridients
  • 50 elderflowers
  • 5 liters of water
  • 2.5 kg of sugar
  • 3 bags of lemon juice
Preparation

Place all 50 elderflowers in a large pan and pour 5 liters of boiled and cooled water over them. Cover the pan with a clean cloth and let the flowers soak overnight. The next day, pour the juice through clean gauze. Then add 2.5 kg of sugar, 3 bags of citronka and stir until the sugar dissolves completely. Pour the juice prepared in this way into clean bottles.

Elder jam from elder flowers

Ingridients
  • 8 to 10 elderflowers
  • 1 lemon
  • 600 g of sugar
  • 1 bag of celery
Preparation

First, shake off the fabric and clean the elderflowers (don't wash them!), which we collected in dry, sunny weather away from the smog. Soak them in acidified water for 24 hours (two tablespoons of vinegar or lemon juice go into a liter of water). Squeeze the lemon to get the juice. Before placing the jam in the jars, put it in an oven heated to 80 degrees Celsius for a quarter of an hour. Strain the acidified elderflower water through a thick strainer lined with cheesecloth and boil. Pour in the jelly, which we previously mixed with three spoons of sugar. Stir in the remaining sugar, bring to a boil again and cook for three minutes. In the meantime, remove the foam from the surface. Pour the liquid into glasses, seal them tightly and turn them upside down to further disinfect them. Store the marmalade in a cold place.

Fried elderflowers

Ingridients
  • 16 elderflowers
  • 250 g of flour
  • 2 eggs
  • 1 dl oil (you can also use coconut fat or palm oil)
  • 2 dl of dry white wine
  • 10 g of cane sugar
  • pinch of salt
  • a pinch of freshly ground cardamom
Preparation

Separate the yolks and whites (save them). Sift the flour into a bowl and add the oil, wine, sugar, egg yolk, salt and cardamom. Mix with a whisk until a smooth dough is formed, which is left to stand for about 30 minutes. Meanwhile, gently rinse the elderflowers and drain them on a (paper) towel. Then beat the egg white until stiff and mix into the dough. Dip the flowers in it and fry them gradually in a not too shallow pan in which we have previously heated the oil (the flowers must float in it). Fry for about 5 minutes until golden brown. In the meantime, turn the elderflowers over so that they bake evenly. After frying, place them on paper towels to absorb as much excess fat as possible.

Elderberry panna cotta

Ingridients
  • 50 g of elder flowers
  • 50 g of brown sugar
  • 250 ml of almond milk
  • 1 teaspoon of real vanilla
  • grated lemon peel
  • a hint of cinnamon
  • gelling agent Agar Agar
  • for decoration: raspberries or strawberries
Preparation

First, carefully clean the elderflowers. Then, boil the almond milk into which we have added the prescribed amount of brown sugar, vanilla and cinnamon. Add elderflowers and grated lemon peel and let stand for 10 to 15 minutes. Strain the mixture, reheat it and add the remaining ingredient - gelatin. Fill four 150-milliliter glasses with lukewarm liquid and refrigerate for at least four hours before serving the elderberry panna cotta. If you want to really enchant, decorate the dessert with raspberries or strawberries marinated in elderberry syrup.

Elderberry Gin & Tonic

Ingridients
  • 6 to 8 freshly picked elderflowers
  • grated rind of one lemon
  • spoon of powdered sugar
  • 500 milliliters of gin
Preparation

Clean the elderflowers and then place them in a large pot or glass. Add the lemon peel, powdered sugar and pour over the gin. Cover the container and let it stand for 24 hours. Strain the mixture through coffee filter paper, gauze or similar, and pour into a clean bottle. Elderberry gin is served with tonic and a lot of ice and you can already enjoy a refreshing gin with a summer taste.

Elderberry and strawberry ice cream lights

Ingridients
  • elderberry syrup
  • some strawberries
  • juice of one lemon
Preparation

Prepare elderberry juice and squeeze the juice of one lemon into it. Cut the strawberries into thin slices or cubes. Shake them into the juice and fill the models for the lights. We freeze and wait patiently.
