Recipe: restaurant-style mushroom sauce

Ingredients - mushroom sauce (for 4 people):

  • 250 g of mushrooms (champignons, chanterelles or champignons)
  • 2 tablespoons (olive) oil or coconut fat
  • 3 cloves of garlic
  • parsley
  • 1/2 leek
  • 1 tablespoon of flour
  • 1/2 sour cream
  • 1 triangle of melted cheese
  • salt
  • pepper

The process of preparing the mushroom sauce:
Cut the cleaned mushrooms into pieces of any size, and chop the leek into rings, parsley and garlic. Fry the latter in olive oil in a pan. Then add the leek and fry together for a few more minutes. Add the mushrooms, season to taste and mix. Simmer for 10-15 minutes. Then add flour to the sauce, mix quickly and cover with 2 deciliters of water. Cook for 10 minutes. Add sour cream and melted cheese, mix, and leave the sauce on a moderate heat until the cheese melts. Mix and serve next to pasta, sausages, polenta, meat, rice... Have a good run!

Ingredients for mushroom spread:

  • 500 g of mixed mushrooms
  • 40 g of butter
  • 4 tablespoons of dry white wine
  • lemon
  • 3 sprigs of parsley
  • nutmeg
  • salt
  • black peppercorns

The process of preparing the mushroom spread:

Clean the mushrooms, chop them into small pieces and sprinkle with lemon juice. Melt the butter in a bowl and sprinkle the mushrooms into it. Cover and simmer for five minutes. In the meantime, chop a tablespoon of parsley. Remove the lid and quickly fry the mushrooms. Then add wine, salt, pepper and nutmeg. Stir and fry until the liquid is almost completely cooked. Serve on toasted bread or bread and sprinkle with parsley at the end. Have a good run!

  • 50 dag of potatoes
  • 20 dag of fresh mushrooms (can also be dry)
  • 2 tablespoons of flour
  • 4 tablespoons of sour cream
  • 1 onion
  • 2-3 cloves of garlic
  • vinegar (optional)
  • oil
  • salt
  • marjoram
  • chives
  • parsley
  • Bay leaf

The process of preparing cream of mushroom soup:
First, peel the potatoes and cut them into cubes, and the mushrooms into thin slices. If we use dry mushrooms, they should be steamed and chopped beforehand. Shake both in a container with 2 dcl of water and boil. Add a bay leaf and a little marjoram and season with salt and pepper. Fry the chopped onion in oil, add a tablespoon of flour and cover with some water. Bring to a boil and mix into the soup. Finally, add chopped parsley and chives, cream and, if desired, a touch of vinegar. Have a good run!
