Recipe: the famous Christmas pudding, a treat for the eyes and the mouth

What if this year for Christmas, instead of walnut cake, we put English Christmas pudding on the table for a change, a wonderful dark dessert that is not only a culinary extravagance, but also a wonderful addition to a festively decorated table. The recipe for a famous Christmas pudding is certainly not a "one-liner", but a symphony of flavors does require a bit more effort.

English Christmas Pudding is an original English dessert that goes way back in history, more precisely in the Middle Ages, when it was made up of 13 other ingredients, which was strongly associated with religion (Christ and the 12 apostles). Today, the ingredients are slightly more, because dessert it no longer relies so much on faith, but more on satisfying the palate.

A recipe for the famous English Christmas pudding

Ingredients for English Christmas Pudding:

  • a good cup of all-purpose flour
  • 1 teaspoon of ground cinnamon
  • 1 teaspoon grated orange peel
  • half a teaspoon of ground ginger
  • 3/4 teaspoon of tartaric acid
  • pinch of ground cloves
  • half a cup of brown sugar
  • 1/4 cup butter or margarine (room temperature)
  • 4 egg whites
  • 1/3 cup American (pecan) nuts
  • half a cup of apple juice
  • 3/4 cup raisins
  • 1/3 cup candied raisins
  • 1/2 cup grated carrot
  • 1/3 cup candied pineapple or 1/4 ginger

Making English Christmas Pudding
At first, grease a 1.5 liter container "reservedly". In another, mix flour, tartar, orange peel, cloves, cinnamon and ginger. In a third bowl, beat the butter and sugar with an electric mixer until light and fluffy. Then add egg whites to them and mix well again. Stir in about a third of the flour mixture and half of the apple juice with a wooden spoon. Only then mix in the rest of the flour, followed by the raisins, carrots, pineapple and pecans. Spread the well-kneaded mass evenly over the baking dish and cover with foil. Put it in a tall container, fill it halfway with water and cook it on the fire for two to two and a half hours. Check if it is cooked with a toothpick. Leave the pudding in the bowl for another 10 minutes, then turn it over onto a plate. For a bit of a show, you can pour brandy over the pudding and light it while serving.
