Elder flowers are one of the most overlooked free foods that can be used to make not only a refreshing drink, but also a delicious meal. Have you ever had fried elderflowers on your plate? No? Then it's time to change that! You won't regret it.
Have you ever smelled something sweet in the air while walking these days? Chances are they were elder flowers. The elder is a shrub that grows up to 10 meters high and usually flowers in June, but this year we are a little ahead of schedule and can already harvest it. Of course, as far as possible from roads and smog, in sunny, but necessarily dry weather.

And if you thought you could make them just elderberry juice or elderberry syrup, you were honestly wrong. You can also prepare from them a delicious meal, which ends up on a plate instead of in a glass.
Recipe for fried elderflowers:
Ingredients for Fried Elderflowers:
- 16 elderflowers
- 250 g of flour
- 2 eggs
- 1 dl oil (you can also use coconut fat or palm oil)
- 2 dl of dry white wine
- 10 g of cane sugar
- pinch of salt
- a pinch of freshly ground cardamom
The process of making fried elderflowers:
Separate the yolks and whites (save them). Sift the flour into a bowl and add the oil, wine, sugar, egg yolk, salt and cardamom. Mix with a whisk until a smooth dough is formed, which is left to stand for about 30 minutes. Meanwhile, gently rinse the elderflowers and drain them on a (paper) towel. Then beat the egg white until stiff and mix into the dough. Dip the flowers in it and fry them gradually in a not too shallow pan in which we have previously heated the oil (the flowers must float in it). Fry for about 5 minutes until golden brown. In the meantime, turn the elderflowers over so that they bake evenly. After frying, place them on paper towels to absorb as much excess fat as possible. Have a good run!
