A quesadilla is like a 'Mexican pizza' that you can make with different toppings. This time we chose a recipe for - quesadilla with mushrooms.
Quesadilla with mushrooms is truly something special. It is an excellent alternative to meat, which will impress both vegetarians as well as omnivores. You only need 15 minutes to prepare them, so they are a great choice if you are surprised by unannounced visitors.
Quesadilla with mushrooms
Ingredients
- 3 tablespoons of extra virgin olive oil
- 200 g portobello mushrooms, cut into 8 mm (or other mushrooms of your choice)
- ½ teaspoon chipotle powder
- ¼ teaspoon table salt
- ¼ teaspoon black pepper
- ¾ cup grated (75 g) colby cheese
- 2 tortillas
- sour cream or guacamole
Directions
- Heat 2 tablespoons of oil in a pan over medium heat. Add the mushrooms and cook for 1 minute, stirring regularly to prevent them from sticking to the pan.
- Add another tablespoon of oil, toss to coat the mushrooms, then add the chipotle powder, salt and pepper. Cook for another minute until the surface of the mushrooms turns golden. Shake the mushrooms in a bowl and wipe the pan with a paper towel.
- Spread half of the cheese on half of the tortilla, place half of the mushrooms on top, then fold over the other half. Repeat with the other tortilla.
- Place the pan in which you previously fried the mushrooms on medium heat again. Place the tortillas in the pan and fry them for a good minute until they become crispy and golden. Flip and fry for another minute until crisp.
- Cut each quesadilla in half and serve with sour cream or guacamole. Finally, squeeze some lime juice over it. Doberte k, the quesadilla is ready.
