Ingredients
- 2 fish fillets as desired
- salt, pepper
- olive oil
- 100 g of cherry tomatoes
- 1/2 onion
- fresh basil
- 1 bunch of parsley
- 3 slices of toasted bread
- 50 g of Parmesan cheese
Directions
- Season the fish fillets with salt and pepper.
- Fry them quickly in a lightly oiled pan for one minute on each side. Then we take them out of the pan and in the same pan, fry the cherry tomatoes, which we cut in half earlier, and finely chopped onions.
- When the vegetables are soft, add the chopped basil and fry for another minute. Then transfer the baked vegetable mixture to a plate.
- Grind bread, parsley and parmesan in a blender.
- Place the fish fillets in the baking dish, pour the vegetable mixture over them, and then sprinkle with a generous amount of the bread mixture.
- Bake in a preheated oven at 180°C for about 6 minutes until the bread crust is golden brown.
