Pasta with pumpkin and prosciutto
INGRIDIENTS
- 400 g of fresh pumpkin
- 350 g of pasta (to your taste)
- 150 g of prosciutto (to your taste)
- 2 cloves of garlic
- olive oil
- 3 tablespoons of grated parmesan cheese
- salt and pepper
- rosemary
- White wine
PREPARATION
Follow the instructions on the package and prepare the pasta. Cut the pumpkin into small squares and then fry it together with garlic and rosemary in oil. Add salt (don't overdo it because prosciutto is salty) and pepper. Add a few tablespoons of water to the ingredients and roast/cook them until the pumpkin is soft. Towards the end of cooking, add a little wine and wait for the latter to evaporate.
After cooking, divide the resulting "pumpkin sauce" in half. Make a puree out of half, then combine it with the pasta, and add diced bacon to the other half and fry everything together on the fire. After roasting, combine the diced pumpkin and bacon with the rest of the paste (already combined with the puree) and sprinkle Parmesan cheese over it. Bon Appetit!

INGRIDIENTS
- 275 g of pulled dough
- 0.5 kg pumpkin
- ½ teaspoon of salt
- 2 eggs
- 30 g of butter
- 200 g of cottage cheese + 2 pots of sour cream
PREPARATION
Cut the pumpkin into shards (without seeds) and grate it and add salt. For a better taste, you can let it stand for half an hour to drain all the excess liquid from it, and then squeeze it with your hands. In another bowl, combine cottage cheese, sour cream and salt, then add (squeezed) pumpkin. Melt the butter in a pan. Roll out the pulled dough and brush it with melted butter. Spread the resulting mass evenly over the dough, roll it up and spread the beaten egg over it. Bake the roll in an oven heated to 200 degrees Celsius for about 30-45 minutes. Bon Appetit!

INGRIDIENTS
- 2 cups pumpkin puree
- 1 and 3/4 cups flour
- 1 cup sugar + ½ cup dark sugar
- 1 teaspoon of baking powder
- ½ spoon of salt
- ½ cup coconut oil
- 2 eggs
- 1/4 teaspoon ground cloves
- 1/4 teaspoon of nutmeg
- 2 teaspoons of cinnamon
- 1 teaspoon of vanilla extract
PREPARATION
Preheat the oven to 190 degrees Celsius. Combine flour, sugar, salt and spices and mix well. In another bowl, mix eggs, pumpkin puree, coconut oil and vanilla extract. Add the wet ingredients to the dry ingredients and mix well so that the latter are perfectly combined.
Divide the batter evenly between 12 squares in the muffin pan and bake for 25 minutes. Use a toothpick to check when the muffins are done. Chill the dessert and have a good run.
