Hokkaido Pumpkin Gnocchi

We have prepared for you a recipe for delicious gnocchi made from yellow pumpkin, which is completely easy and does not require many ingredients.

One of the delicious ideas for lunch is pumpkin gnocchi, the preparation of which is completely easy even for those who are used to buying gnocchi in the store. You will need a lot of time or ingredients for recipe one, but you will surely impress your loved ones with it.

Ingredients

  • 1 kg of pumpkin
  • 1 tablespoon of olive oil
  • 260 g of flour of your choice
  • 50 g of corn starch
  • 1 egg
  • 50 g of grated Parmesan cheese
  • pinch of salt

Directions

  1. Peel the pumpkin, remove the seeds and cut it into 1 cm square pieces.
  2. Place the pumpkin pieces in a baking tray lined with baking paper. Bake for about 1 hour at a temperature of 180 °C. When the pumpkin is baked, remove it from the oven and wait 15 minutes for it to cool to room temperature.
  3. Place the pumpkin pieces in a large bowl. Then blend them with a hand mixer until you get a puree texture.
  4. In another bowl, mix the flour and cornstarch. Then make a well in the center of the dough and place the pumpkin puree in it. Add salt, egg yolk and Parmesan cheese. Mix everything together and knead with your hands.
  5. Flatten the dough on a floured surface. Then divide it into 10 pieces and shape each of them into a "sausage" about 2 cm thick with a rolling pin. Then cut each piece into equal sized gnocchi.
  6. Cook the gnocchi in boiling, salted water for about 5 minutes or until they float to the surface. Serve alone or with sauce. Bon Appetit!
