It all starts with a good filtration system. At HI KO FI they came up with reverse osmosis, which ensures that the water is always excellent. They are making coffee on the LaMarzocco Stradi apparatus, which allows excellent control over coffee extraction. Theirs too coffee grinder is different from the classical ones. Make sure that the coffee does not stay in it, so that it falls into each one shot real fresh 21 grams of coffee (as opposed to the classic 6 to 8 grams).

The coffee they offer changes. For a while, they have, for example, species such as Kenya, Colombia, Costa Rica, again a second time Ethiopia, Congo or Guatemala. It's about you single origin coffee (one type of coffee). They also offer blend, which is a mixture of several different ones single origin coffee. This is also changing. The coffee they provide is seasonal, but they are currently waiting for the very fresh new coffees of this season.
They roast the coffee themselves at a local roastery and this one is less roasted than other commercial coffees, which of course is best known by the taste. If you are used to bitter taste, their world of coffee is completely different. Blend, which is their most roasted coffee, has bitterness instead of unpleasant bitterness dark chocolate, tobacco or nut flavor. Single origin coffees (Kenya, Guatemala, Ethiopia) are known as fruit coffees, because they have dominant notes of fruit acids (currant, strawberry, apple...). With proper roasting, they achieve this  balanced cup of coffee.
