Hollandaise sauce
Ingredients
- 200 g of butter
- 3 egg yolks
- 1 lime
- 1 teaspoon Dijon mustard
- 1 teaspoon of cooking cream
- 1 teaspoon of sugar
- ½ teaspoon of wine vinegar
- salt, pepper
Directions
- Using a hand mixer, mix the egg yolks together with the lime juice, mustard, cream, sugar and a little salt.
- Melt the butter in a small pot and boil it briefly.
- With the mixer on, slowly add the melted butter to the egg mixture and continue mixing. Then season with salt and pepper and add white wine vinegar.
